Sunday 26 August 2012

The office was total pink/peach mania last week! Spring is in the air so black is now banished to the back of the wardrobe and our current crush on pink lemonade is taking over.

So we set ourselves a challenge of eating all pink for one day! Here's my menu:

  • Breakfast was a strawberry smoothies with raspberry garnish.
  • Morning tea was hibiscus and pomegranate tea with pink sugar cookies.
  • Lunch was pretty pink smoked salmon with with cream cheese and capers and a frothy glass of pink lemonade.
  • Dinner was Borsh or Beetroot soup which much to my surprise was delicious (remember to add a dash of sour cream right at the end) and was then followed ice cream with rhubarb!
Wonder if I'll turn pink tomorrow?!

Amazing Creatures

Amazing Creatures

I came across this amazing little creature last night! It's called a Glaucus Atlanticus and despite my initial disbelief that it was a real living creature Wikipedia tells me that this beautiful little creature is not only real but can be found right here on Australian beaches and is in fact a sea slug of all things!

Here is the Wikipedia link so you can check out this little beauty for yourself! http://en.wikipedia.org/wiki/Glaucus_atlanticus

Strawberry Cupcakes

Sweetheart Cakes

Found these lovely cupcakes through pinterst last week and had so much fun making and eating them that I just had to share the receipe which I found at
http://www.instructables.com/id/Chocolate-Pudding-Cupcakes-with-Strawberry-Centers/

Ingredients:

1 package cake mix, chocolate
1 package strawberries, cleaned and hulled
1 package pudding, chocolate
Fresh mint sprigs,optional but awesome

Directions:

1. Prepare cupcakes according to package and let cool. Using a paring knife, core out a well down into each cupcake, for your strawberry to fit into. Prepare your pudding according to the package. Let set until nice and pudding-y (solid - wet gloopy pudding will ruin the cupcakes, so don't be in a rush, let the pudding firm up!)

2. Stick the strawberry pointy side down into your cupcakes. Take the piece of the cupcake that you cut out, and place it on top of the strawberry, after you push it down into the cupcake.

3. Top liberally with pudding in leu of frosting.

4. Add a sprig of mint if you like.  I think it adds a certain something, and my neighbor had some growing in her kitchen and shared…but don’t go out and buy some.

5. I cut each cutcake in half and set it on a plate, because presentation is everything with these suckers. They are DELICIOUS and super easy!

Spring in your step

Here at Mombasa we are loving the feeling that spring is just around the corner. The autumn winds are here but there is definitely a touch of spring in the air with cardigans being shed all over the office!

To celebrate the warm days and cool nights we had a new model come visit us and boy did she look absolutely gorgeous in our spring inspired pieces!
